Honey


Honey is a popular sweetener produced from nectar, propolis or "bee glue" and enzymes in a bees' saliva. Honey is the only food on the planet that will not spoil or rot. Other insects produce honey but bee honey is the more popular kind. Honey is composed of simple sugars easily used by the body. It was the earliest reliable sweetener used in baking, enjoyed as spreads and added to drinks. It is also currently used in the manufacturing of certain processed foods like ham.


The color, flavor, and even aroma of a particular variety of honey may differ depending on the nectar source of flowers visited by the honey bee. The colors may range from nearly colorless to dark brown, the flavor may vary from delectably mild to distinctively bold, and even the odor of the honey may be mildly reminiscent of the flower.


Light colored honeys are generally milder in flavor while darker ones are more robust. Depending on the bees' nectar source, the color and flavor of honey may differ. There are currently more than 300 kinds of unique honey in the United States alone.


Varietal honeys may be best compared to varietal wine in terms of annual climactic changes.  Even the same flower blooming in the same location may produce slightly different nectar from year-to-year depending upon temperature and rainfall.

However, when left in a cool dark place for a long time it will crystallize. When this happens loosen the lid, boil some water and sit the honey container in the hot water, but turn off the heat and let it liquefy naturally. It is then as good as it ever was. Portugal - Lisbon - São José Hospital: There have been many studies recently that involved the use of honey for treatment of cuts and burns. The results of these studies are truly amazing. One study in particular, conducted at the São José Hospital, Lisbon, Portugal, from June of 1998 through December of 1999, showed outstanding results:


This study involved 100 patients over a period of many months. Their burns covered less than 40 percent of their bodies. They ranged in age from three to 65 years old. Consent was given by all the patients, or their parents in the case of small children. Randomly, the patients were put into two groups: one which used a honey dressing on their burns and one which used a typical dressing of silver sulphadiazine and gauze.


Natural, unprocessed honey without any dilution was used for the honey group. Burns were cleaned with a normal saline solution before being dressed. Every other day the dressings were changed and wounds were cleaned. Each time the dressings were changed, the wounds were checked for infection and their healing was monitored and recorded.


The results of the study were amazing:


The group of patients that had their burns dressed with honey healed significantly faster with far less infection as well as less scarring. The honey group also experienced less pain than the group with silver sulphadiazine dressings. While the silver sulphadiazine group suffered from frequent infection, the honey group had bacterial cultures that were sterile 90 percent of the time. The honey group showed significantly more improvement than the silver sulphadiazine group at the seven and 14 day marks. What's more, the honey group showed no signs of allergy or irritation from their treatment.

The breakdown of healing rates was as follows:

  • Honey: After seven days, 16 percent were healed. After 14 days, 90 percent were healed. After 21 days 100 percent were healed.

  • Silver sulphadiazine: After seven day, eight percent were healed. After 14 days, 52 percent were healed. After 21 days, 100 percent were healed.

In addition, the average hospital stay for the honey group was 22 days while the average stay for the silver sulphdiazine group was 32 days.

One of the oldest medicines known to man, honey has been used in the treatment of respiratory diseases, skin ulcers, wounds, urinary diseases, gastrointestinal diseases, eczema, psoriasis, and dandruff. Today, we know the validity of these timeless treatments, as research has demonstrated that honey can inhibit the growth of bacteria, yeast, fungi, and viruses.


The power of honey comes from the wide range of compounds present in the rich amber liquid. Honey contains at least 181 known substances, and its antioxidant activity stems from the phenolics, peptides, organic acids, and enzymes. Honey also contains salicylic acid, minerals, alpha-tocopherol, and oligosaccharides. Oligosaccharides increase the number of “good” bacteria in the colon, reduce levels of toxic metabolites in the intestine, help prevent constipation, and help lower cholesterol and blood pressure.


The key point to remember with honey is that its antioxidant ability can vary widely depending on the floral source of the honey and its processing. The phenolic content of the honey depends on the pollen that the bees have used as raw material. There’s a very simple way to determine the health benefits of any honey: its colour. In general, the darker the colour of the honey the higher the level of antioxidants.


There can be a twenty fold difference in honey’s antioxidant activity, as one test revealed. For example, Illinois buckwheat honey, the darkest honey tested, had twenty times the antioxidant activity of California sage honey, one of the lightest coloured honeys tested. Overall, colour predicted more than sixty percent of the variation in honey’s antioxidant capacity.


Maintaining optimal blood sugar levels has a positive effect on overall health, and honey seems to contribute to this goal. In one recent study of thirty-nine male and female athletes, following a workout, the participants ate a protein supplement blended with a sweetener. Those who ate the supplement sweetened with honey, as opposed to sugar or maltodextrin, enjoyed the best results. They maintained optimal blood sugar levels for two hours following the workout and enjoyed better muscle recuperation.


There are more than three hundred kinds of honey in North America, such as clover, buckwheat, and orange blossom. Light-coloured honeys are generally mildly flavoured, while dark honeys are more robust. Perhaps honey’s most important health-promoting benefit is its antioxidant ability. We know that daily consumption of honey raises blood levels of protective antioxidants.


In one study, each day participants were given about four tablespoons of buckwheat honey while eating their regular diets for twenty-nine days. A direct link was found between the subjects’ honey consumption and the levels of protective polyphenolic antioxidants in their blood.


In another study, twenty-five healthy men drank plain water or water with buckwheat honey. Those consuming the honey enjoyed a 7 percent increase in their antioxidant capacity.


As the U.S. Department of Agriculture estimates that the average U.S. citizen consumes about 68 kilograms of sweetener annually. Substituting honey for at least part of this amount would make an impressive contribution to our overall antioxidant status and would no doubt be a significant health promoter.


An important note: Never give honey to children younger than a year old. About 10 percent of honey contains dormant Clostridium botulinum spores, which can cause botulism in infants.


Honey, long recognized as a wound healer, has been used for centuries as a topical antiseptic for treating burns, ulcers, and wounds:


A study in India compared the effectiveness of honey with a conventional wound-healing treatment, silver sulfadiazine, on patients suffering from first-degree burns. Amazingly, in the honey-dressed wounds, early subsidence of acute inflammatory changes, better control of infection, and quicker wound healing were observed. Some researchers attribute this effect to the nutrients in honey that promote skin growth and to the antibacterial substances present in honey.


While I’m not recommending that you consider using honey topically, its power in this role is further evidence of its wide range of health benefits. An additional benefit of honey is found in the oligosaccharides it contains. They increase the numbers of good bacteria in the colon, reduce levels of toxic metabolites in the intestine, help prevent constipation, and help reduce cholesterol and blood pressure.

Scientists at the University of Hannover in Germany observed that type 2 diabetics consuming cinnamon extract, which contained the equivalent to 3 g of cinnamon powder, daily for four months lowered their blood glucose levels compared with those ingesting a placebo.





Another study published in the journal Diabetes Care in 2003 looked at 60 men and women with Type 2 diabetes who were taking diabetes pills. The participants took either 1, 3, or 6 grams of cassia cinnamon or a placebo, in capsule form, for 40 days. After this time, fasting serum blood glucose levels dropped between 18% and 29% in all three groups that received cinnamon, triglycerides lowered by 23 to 30 percent, low-density lipoproteins (LDL) lowered by 7 to 27 percent, and total cholesterol lowered by 12 to 26 percent.


However, only the participants who had taken the smallest amount of cinnamon (1 gram) continued to have improved blood glucose levels 20 days after they stopped taking it, for reasons the researchers didn’t quite understand.


In the study, cinnamon also helped lower triglycerides (a blood lipid) and LDL (or “bad”) cholesterol levels. The benefits continued after 60 days, 20 days after participants had stopped taking cinnamon. No significant changes in blood glucose or blood lipid levels occurred in the placebo group.


Cinnamon by its insulin-enhancing properties is not the only spice to show a positive effect on blood glucose levels. Cloves, bay leaves, and turmeric also show beneficial effects.
